Savour the best in pét-nat wines and sourdough pizzas at this gastronomic celebration on 27 March 2021

With its pioneering approach towards bringing together low-intervention wines, sourdough pizzas and aperitivos under one roof, Interval has already turned heads in the short time since the opening of its second, more ambitious expansion in The Lohas. Now, at Interval's just-opened third restaurant at Cyberport, founders Josh and Caleb Ng of Twins Kitchen are exclusively inviting customers of Mox Bank to experience wine and food offerings at this new location with a unique food and wine tasting event on 27 March 2021. With a selection of vintages chosen by sommelier Wallace Lo and a food menu drawn up by Josh and Caleb, Mox customers can expect a night of revelry and culinary enjoyment. Among Lo's curation, highlights include the 2019 Meinklang “Foam” White from Austria, the 2017 Zidarich Vitoviska, and the 2008 Serafino Riserva from Italian producer Musso by Contra Soarda. And served fresh out of the custom-built Neapolitan wood fire oven will be a steady procession of moreish Italian pizzas—think frutti di mare, pizza di parma, and quattro formaggio—alongside aperitivos made by the steady hand of head chef Steve Chiu, formerly of Octavium and 8½ Otto e Mezzo Bombana.

"At Interval, we would like to highlight our interpretation of Italian cuisine, complete with accents of Chinese elements that are familiar to us, woven throughout various dishes on offer," says Josh.

At this exclusive event, guests will be offered a first look at the LAAB Architects-designed Cyberport restaurant. The space encompasses an open kitchen showcasing live-fire cooking, as well as an on-site farm created in partnership with Farmacy HK that will provide seasonal micro greens, edible flowers and vegetables to the kitchen.

At its core, Interval's third location is the latest affirmation of a belief shared by Mox and Twins Kitchen that knowing what you’re passionate about, and having the privilege to work on it, is success in itself. Much like Josh and Caleb's lifelong journey, at Mox, the best way to grow is together.
