The front man of Peru’s top restaurant Central returns to Hong Kong for his first establishment in Asia

Celebrated for the highly terroir-specific cuisine served at his restaurant Central in Peru, Virgilio Martinez is heading east, staking claim on Central's H Queens—which also houses Arbor and Ecriture—this summer. Martinez’s debut restaurant in Hong Kong will be called Ichu Peru, and is set to open this July.

The restaurant is named after a plant most often found in the Peruvian Andes and one that is grown in extreme conditions. Ichu Peru will showcase Peruvian comfort food served in a casual environment. The esteemed chef will celebrate the country’s no-fuss dining culture with an abundance of traditional Peruvian ingredients, creating dishes from the South American canon.

The project is a collaboration with the Dubai-based Bulldozer Group, which previously opened Causeway Bay’s Seafood Room, and Martinez is appointing chef Sang Jeong as Ichu Peru’s resident chef. Jeong has previously worked alongside Martinez in his restaurant in Peru. Celebrated interior designer Joyce Wang will embellish the restaurant space based on inspiration of Peru’s landscape, adding raw finishes, dynamic textured materials and vibrant colours to evoke Martinez’s culinary style.
