Welcome to Food File—a weekly bite-sized round-up of dining news in Macau, from Michelin-starred restaurants to casual dining. This week we sample a variety of holiday tipples, festive high tea, the flavours of Portugal, and preview two new restaurants from celebrated French chef Alain Ducasse

1. The Ritz-Carlton Bar & Lounge

Whatever your choice of tipple—cocktails, champagne or aperitivos—you can triple their pleasure at The Ritz-Carlton Bar & Lounge during the holiday season. Beginning with The Ritz-Carlton Hours, from 6pm-9pm Sunday through Thursday, guests can enjoy exclusive offers on spirits and mixers; red, white and sparkling wines; Aperol Spritz; beer; and signature cocktails, including Doctors Advice and Victoria. What’s more, signature tapas such as ginger and cilantro prawn spring rolls with sweet chili sauce are served at half-price. Meanwhile, for a taste of the bubbly, the Ritz presents Champagne Hours daily from 8pm-10pm featuring sparkling pours from the renowned French Champagne house Louis Roederer founded in 1776. Guests who order a glass or bottle of Louis Roederer Brut or Louis Roederer Cristal are entitled to up to six complimentary market-fresh oysters. Lastly, on Fridays and Saturdays, diners can arouse their appetite with a special Aperitivo menu that includes Mediterranean cold cuts and cheeses, olives and two signature tapas served with an Aperol Spritz, house mixers, red and white wine or fruit punch.

2. The Lounge, Conrad Macao

Until year-end, The Lounge, Conrad Macao will be serving a mouth-watering Festive High Tea menu with savoury snacks including roasted beef skewers with teriyaki sauce, foie gras terrine on walnut bread and fig with port wine jelly, pumpkin tart with balsamic caviar, lobster and avocado salad puffs. Sweet delights include chestnut mousse and meringue, chocolate cake, Christmas stollen, mince pies and pink cranberry scones with clotted cream and strawberry, along with a choice of tea, coffee or two Christmas cocktails/mocktails. To bring a taste of the holiday season home, Conrad Macao’s pastry chef Stephane Blanchard has prepared takeaway homemade cakes, including Galette des Rois cake (puff pastry pie filled with frangipane), a treat that celebrates the arrival of the Three Wise Men in Bethlehem and is traditionally shared at Epiphany, on January 6.

3. The Manor

Anyone with an appetite for good food from around the world and the flavours of Portugal will love the Festive Semi-Buffet Lunch at The Manor, The St Regis Macao’s signature restaurant. Guests can choose from a freshly-made selection of starters, soups, artisan charcuterie and desserts for MOP168+, or add a main course for MOP228+. Starting with sourdough toasts and spreads delivered to the table, diners can explore the oyster bar, choose from 12 types of fresh salads, and upgrade cold platters with olives and Jean-Yves Bordier cheeses. Main courses include signature Portuguese-inspired delicacies such as Portuguese seafood rice casserole and fiery Piri Piri Iberian pork spare ribs, as well as premium prime steak (MOP338+).

4. Alain Ducasse at Morpheus

Already home to 18 Michelin-starred restaurants, Macau will cement its outstanding culinary reputation with the addition of not one, but two new restaurants from one of the world’s most decorated chefs, Alain Ducasse. City of Dreams will collaborate with the legendary French-born Monégasqueon chef at two side-by-side dining destinations, plus a bar, at its US$1-billion, 780-room, Morpheus hotel tower, part of the resort’s phase 3 launch in the first half of 2018. Alain Ducasse at Morpheus will serve up the signature expression of French contemporary haute cuisine that the chef is best known for. Meanwhile, Voyages by Alain Ducasse is a new concept tailor-made for the property offering a unique take on Asian cuisines inspired by the chef's travels over the past 30 years, as well as his most recent culinary discoveries. “I always create and never duplicate—each of my venues is different and reflects the mood of its location,” said Ducasse. “I always start from the soul of the place and from clients’ expectations to create a cuisine that is specific and that resonates with the location and the people.”
