At the Hotel Royal Macau, Fado, named after the poignant traditional Portuguese musical style, features a menu that according to executive chef Luís Américo aims to deliver “the authentic taste and charisma of Portuguese cuisine with a contemporary twist”, and is constantly evolving. For the holiday season, the chef has prepared an authentic Portuguese Christmas Wine Pairing Set Menu, which among its many highlights includes roasted octopus with onion sand, roasted pepper chutney and chicory lettuce; the Portuguese signature dish bacalhau and Alheira sausage; and cod confit in olive oil with potato mousse, cabbage, carrots and onion pickles.

Sofitel Macau At Ponte 16, one of the properties under the AccorHotels Greater China network, will celebrate the fifth anniversary of Plant for the Planet initiative with apple-themed delicacies at Mistral restaurant. But first, here’s some background. Ten years ago, at the age of nine, Germany’s Felix Finkbeiner decided to fight climate change by planting one million trees. Today, Plant for the Planet, together with the United Nations’ Billion Tree Campaign, has surpassed his original goal by planting more than 14 billion trees around the world. AccorHotels has worked with Plant for the Planet since 2009 in a unique reforestation project designed to protect biodiversity, by offering guests the option of reusing their towels and in turn allocating their laundry bills to tree planting projects. The result: every day 30 trees are planted across Greater China and more than five million trees have been planted since the programme was launched. As part of the initiative, AccorHotels Greater China has been working in partnership with Zigen Association for Rural Education and Development to develop a fruit orchard plantation for the past five years at Qinglong County in the province of Hebei. With that in mind, Sofitel’s Mistral Restaurant presents the Apple Corner, serving a series of apple delicacies such as mini pizza with apple, apple coleslaw salad, apple tempura, and more.

Mandarin Oriental, Macau has introduced a selection of sumptuous Silver Hill Duck dishes at its Vida Rica Restaurant, becoming the first restaurant in Macau to serve the world’s most acclaimed duck. Silver Hill Duck is a cultivated hybrid from the Aylesbury Duck and the Peking Duck, which cannot be found anywhere else in the world except at the Silver Hills Farm in Emyvale of Ireland. Jarrod Seah, the director of The Chi Collective, the sole Asian distributor for Silver Hill Ducks, says, “The Silver Hill Duck is recognised as setting the benchmark for flavour, quality, consistency and appearance.” In order to demonstrate the duck’s distinct flavour, executive sous chef Ethan Hiew and chef de cuisine Matthias Knilling team up to create a series of unique dishes, including Western cooking styles such as confit and smoked; Chinese styles such as roasted, wok-fried or drunken; and also baked with rice ‘Portuguese’ style, an elegant reminder of Macau’s Portuguese roots.
