With only 24 seats, Privé combines the best features of a chef’s table, a private kitchen and a seasonal menu. Chef Jean-François Nulli has created two outstanding tasting menus for autumn that are remarkable both for their taste and their presentation. Among the highlights are French ratatouille with feta creamy cheese and thyme, fresh king prawn and vegetables, or pigeon cooked on hay served with roasted pumpkin, carrot, cinnamon and orange mash. Diners should also save room for one of the exquisite dessert choices such as raspberry millefeuille, which is guaranteed to impress.

Chef Akira Hayashi of Yamazato Restaurant at the Hotel Okura Macau is a master of kaiseki, the traditional, multi-course meal considered the highest form of Japanese cuisine, where each dish is a work of art. For late-autumn, diners can catch a taste of chef’s talents with an exclusive seasonal gozen lunch, entitled Shimotsuki Gozen, that includes a seasonal appetiser, two kinds of sashimi, salmon hot pot with Sake lees soup, deep fried minoage shrimp, steamed rice with assorted pickles and seasonal dessert. The Sake lees soup is similar to Miso soup, cooked with Miso (soybean paste) and Sakekasu (Sake lees)—it’s the perfect comfort food for the cool weather, warming, rich in nutrients and boasting a naturally sweet taste.
