Italy’s celebrated ‘white diamonds’ take centre stage to shine in autumn’s signature menu

This autumn, Cucina is home to a series of white truffle delicacies as the favourite tuber returns this month. Guests can indulge in a selection of white truffle dishes prepared by chef Andrea Delzanno. Highlights of the seasonal menu include Taiyouran scrambled eggs on toasted bread, Hokkaido scallops and white truffle; handmade tagliolini with butter, Parmigiano cheese and white truffle; potato and leek soup with mixed seafood, salmon roe, and white truffle; risotto with parmesan cheese, Taiyouran soft-boiled egg, yabbies, and white truffles; roasted jumbo quail with beetroot puree, seared duck liver, with pumpkin and white truffles as main course. The truffle menu is complete with gianduja chocolate molten cake with mascarpone foam, gold leaf and white truffle ice cream as a sweet finish. Cucina’s white truffle menu is available from now until January 5, 2021.
