Wynn Macau has revamped its signature Japanese restaurant Mizumi, and the expanded restaurant features various disciplines developed and refined by esteemed Japanese chefs. Honouring authenticity and traditional hospitality, Mizumi at Wynn Palace features bold artistic interiors auspiciously embellished with bright crimson details throughout the dining space. Similar to its sister restaurant at Wynn Macau, the establishment at Wynn Palace also serves three distinct cuisines: tempura, teppanyaki, and sushi.

The menu has been designed and crafted by Min Kim, executive chef of Wynn Palace’s Japanese establishments including Mizumi, Sushi Mizumi and ramen-restaurant Hanami. Kim began his career in Japanese gastronomy in Australia before returning to Seoul to work at his father’s Japanese restaurant, but it was his stint at revered Tokyo restaurants Narisawa and Nihonryori Ryugin that enriched his expertise and polished his style to that of the seasoned executive chef he is today.

His love for seafood is reflected in the abundant selections at Mizumi and Sushi Mizumi, where he leads a team of eight Japanese master chefs. Through meticulous preparation and flawless execution, they present premium quality sushi and teppanyaki, and offer guests an impressive dining experience.

Guests at Mizumi can experience a unique selection of highly seasonal Japanese cuisine, notably shown in Mizumi’s a la carte selection. The Chefs’ Special Kaiseki set menus are uniquely designed to accentuate the best ingredients of the season. Those who have a la carte dining in mind should not miss chef Kim’s special recommendations featured throughout the menu. Look out for refreshing appetisers and Kim’s unique chef’s special osusume ("recommendations" in Japanese) section where top-quality ingredients such as A4 Kumamoto wagyu steak, freshwater eel, and free-range pork from Okinawa are reinvented in Mizumi's signature style with finesse. Kim's nine-course summer kaiseki menu is another specialty worth savouring, as guests can indulge in premium Japanese ingredients from various Japanese regions, from Chiba prefecture black lip abalone, Hokkaido's sweetcorn and bafun sea urchin, to ayu fish from Shiga prefecture. Each ingredient is meticulously prepared by chef Kim's experienced team of chefs to preserve the freshness and original flavours in nine courses, priced at MOP 1,888 per person with an additional wine and sake pairing option for MOP 800 per person.
