The crossover brings creative dishes, a cooking class, and a one-night-only gala dinner

Hairy crab season is arriving shortly after Mid-Autumn Festival, where the freshwater crabs can be enjoyed until shortly before the holiday season commences. This October, Yan Toh Heen of InterContinental Hong Kong is kicking off the hairy crab season with its first collaboration with Central Hotel Shanghai in a showcase of the seasonal crustacean in an array of creative dishes.

From October 14 to December 10, chef Yiu-fai Lau, executive chef of Yan Toh Heen is hosting a crossover with chef Ho Wang of Central Hotel Shanghai in presenting a Wang Bao He crab banquet, an eight-course hairy crab feast, where each chef will prepare four dishes to form the menu, with creative dishes such as:

- Crispy taro dumpling with seafood and hairy crabmeat
- Wok-fried prawns with hairy crabmeat roe
- Simmered Eastern garoupa fillet with hairy crabmeat in hairy crab roe
- Baked rice with hairy crabmeat and hairy crab roe

On November 4, guest chef Ho Wang will be presenting a Shanghai hairy crab gala dinner, featuring specially-designed eight course dinner with classic Chinese yellow rice wine pairing. The special menu of the night showcases one of his signature dish, steamed hairy crab meat and hairy crab roe with chrysanthemum, where each portion is made with handpicked meat and roe of five hairy crabs, steamed and meticulously presented in the form of the crustacean made of carrots and mud carp meat. The special dish is available only on the gala dinner menu, priced at HK$2,488 per person.

Chef Wang will also be conducting a hairy crab cooking class on November 5, whem he shares tips of choosing and preparing the seasonal crustacean, together with demonstrations on making hairy crab and pork xiaolongbao dumplings. The cooking class also includes a set of souvenirs, including a gift pack of exclusive tea as well as Wang Bao He hairy crab roe sauce, among many. The exclusive cooking class is priced at HK$1,688 per person.
