Surrounded by the skyscrapers and city lights of the Central business district, H Queen’s Ecriture embraces the simplicity of chef Maxime Gilbert’s French cuisine, which is seasonally driven and enhanced through outstanding preparation and execution. Arriving guests will pass through a generous display of art and hefty volumes by culinary masters, before being greeted by an abundance of floor- to-ceiling windows accompanied by a sensational city and harbour view. Gilbert’s simplistic yet minimalist presentation of cuisine does not lack in surprises. The carefully crafted tasting menu chronicles a rich library of flavours where Japanese influences embellish every course, coherently from start to finish. The ama ebi spotlights freshly harvested spot prawns, served raw with a gossamer crisp of beetroot. The perfect puce hue of beetroot captures the eye’s attention while the sweetness compliments the richness of the fresh prawns. Wine pairing is unique, expansively stretching from predominantly French selection to sakes. Service is smooth and attentive, as the team shows keenness and their passion for great hospitality. It’s difficult to stay consistent anywhere, but Ecriture manages it effortlessly.
