Inspired by the street-food vendors of Saigon, Cô Thành offers a concise selection of Vietnamese favourites done well: cold bun vermicelli; chicken pho; and banh mi baguettes stuffed with lemongrass roasted chicken or Vietnamese pork charcuterie and a pile of fresh herbs. It’s a small, urban-rustic eatery best suited to a quick meal, washed down with a bottle of 333 or Saigon beer, or for the sober, fresh young coconut.
