With its clean lines and contemporary details, Kaetsu is a tranquil oasis amidst the bustle of Wanchai. Wood, stone and clay have been combined to create an earthy, comfortable setting, where soft ambient lighting highlight the tables, banquettes and private rooms of the space. An elevated sushi counter enables diners to witness the chefs in action. The environment is so serene that one can easily whittle the afternoon away, indulging in contemporary Japanese fare, company and the pleasantly casual atmosphere.
This modern Japanese eatery is known for their grilled selections, prime sashimi, and for their hot pot variety, which is perfect for sharing during the cool winter months. The premium sashimi on ice is the chef’s choice and according to season, to encompass the most luscious variety of fresh fish, among them sweet, succulent botan ebi shrimp and deceptively buttery yellowtail. Those looking for a filling dish to accompany white rice will love the Saga wagyu, mushrooms, houba leaf and miso paste, which is served deliciously warm on a ceramic plate - each chunk of A3 sirloin packs a strong punch of miso flavor. The grilled marinated Japanese pork is another standout that complements Japanese rice perfectly. Crispy on the outside with juicy and flavoursome meat, this is a perfect example that less is more – simple sea salt as the garnishing allows the natural taste of the pork to shine. On the staff’s recommendation, we opt for the musk melon for dessert, a Japanese speciality fruit that sweetly rounds up the overall meal. If you still have room for more, the yomogi glutinous rice dumplings with red bean paste is always a winner.
Kaetsu has an extensive selection of sake and plum wine. While prices are on the high side, they offer a unique selection, which is clearly categorized by type and the different regions of Japan. The staff are familiar with the sake and wine list, and are able to offer appropriate suggestions.
The staff are friendly without being obtrusive, and well versed with the offerings on the menu. They serve with a smile and are swift to refill empty cups with hot tea, and clear plates, further enhancing the top-notch experience at this five star establishment.
A satisfying dinner for two with wine will cost slightly over $2,000, which is reasonable considering the quality of the food offerings and the overall experience.
