A stalwart on Hong Kong’s Japanese dining scene, the Shangri-La’s old faithful is the location of choice for a smart kaiseki meal. Often popular with Japanese families visiting for osechi ryori—the traditional meal taken on New Year’s Day—as well as corporate workers looking to impress a client, Nadaman may not necessarily be the most innovative, but is certainly a dependable option for a smart meal. The menu is large, comprising most common items in the Japanese culinary canon—sushi, teppanyaki, tempura—though many tend to opt for the kaiseki sets that offer a myriad of intricate treats prettily presented on various stone- and lacquer-wear. The classic Kiri set includes eight courses spanning sashimi to steamed dishes to simmered dishes and rice; an egg custard with pike eel and plum sauce was a delicate start to the meal while grilled ayu fish served in bamboo offered deeper, smokier flavours. It’s worth noting that Nadaman has a strong dedicated section for vegetarians, too. The wine list at Shangri-La is one of Hong Kong’s best and here, there are plenty of premium sakes to pair beautifully with your meal.
