Serving classic Cantonese dishes with a modern presentation, the menu is a dizzying tome filled with seafood, poultry and other luxurious meat- and vegetable-based selections. Although traditional Chinese restaurants are geared towards communal dining and big platters, at One Harbour Road many of the dishes can be ordered as an individual portion—making it easy for groups with differing palates to get along. There are many must-tries, but the chef-recommended steamed Patagonian toothfish fillet with preserved vegetables in bamboo basket stands out in particular, with its creamy and savoury-sweet notes that remind us of a Cantonese version of miso cod. Another highlight is the deep-fried black mushrooms with osmanthus honey sauce, a sweet and crisply battered appetiser designed to awaken the tastebuds.
