Louis XV would feel quite at home in this lavishly decorated 56th-floor restaurant in the Island Shangri-la, with its dining room decked out in brocades, heavy gilded armchairs and polished hardwood pillars. While it may not be the tallest restaurant in Hong Kong, the views are hard to beat, and there’s no bad seat in the house. This opulence of yesteryear is in stark contrast to what’s on the plate, which is remarkably modern, in a kitchen led by young Venezuelan Ricardo Chaneton, who sharpened his knives in such establishments as the Michelin-starred Mirazur in Menton, France. Chaneton is always putting new dishes on the menu, and the restaurant does many special menus according
 to the season or for particular events. There is an a la carte menu with favourites that have stood the test of time, such as lobster bisque, and the chef’s take on classics, such as turbot served with chorizo, as well as several set menus, such the “inspired by the sommelier” menu for wine lovers to try rare bottles. For a restaurant named Petrus, it’s not surprising that the wine list skews heavily towards the big names in France, although interesting selections from other parts of the globe are also available.
