The beloved patissier has boutiques all around the globe,
but this hotel lobby café is among his more unique locations. Designed with the same impressive geometric lines of the Morpheus hotel, the space is a futuristic platform that shows off the colourful pastries and surprisingly elegant all-day café fare on the menu. A seemingly simple quinoa salad topped with pomegranate and marinated tofu is almost Mondrian in its symmetrical presentation, and the tiny cubes of tofu bring a smoky, soy-tinged note to the dish. Of course, the main attraction remains the signature desserts, and the Morpheus Dessert Collection designed specifically for the hotel are a chocolate fiend’s paradise: opt for the Morpheus “Platinum” Ultime, comprising different textures and varieties of chocolate, from dark chocolate disk to single origin Belize dark chocolate cream to chocolate and vanilla sable, coming together to create layers upon layers of delight. To drink, fans of Hermé’s iconic Ispahan can try it in cocktail form, which is mixed from Ispahan tea, raspberry pulp, rose syrup, champagne and lemonade.
