Joël Robuchon understands fine dining, and it shows at this outpost in Macau. As Grand Lisboa’s top dining destination, Robuchon au Dome is the epitome of French fine dining. Located at the top floor of the hotel, guests must travel through a private elevator to reach the restaurant, which is centred under an opulent crystal chandelier and surrounded by curved glass windows overlooking the magnificent city and harbour view of Macau. Service is seamless and personal, but it is the food offering that sets Robuchon au Dome apart from the rest of the pack. The bread trolley is a cornucopia of house-made loaves, from traditional baguette to flavoured brioche and sweet buns, followed by course after course of meticulously prepared top-quality ingredients, particularly seasonal and rare produce. Each dish is complex in its own way, from a melange of ingredients forming the avocado and king crab cannelloni to the textures in the crispy soft-boiled egg starter. One simply must experience the restaurant’s incomparably light millefeuille, or classic French treats such as the likes of baba au rhum and Floating Island. The dining experience, paired with the sommelier’s choices from the city’s richest volume of wine collections, is a true journey unlike any other.
