Hong Kong is fortunate to have Sushi Masataka’s nine-seat cypress counter hidden on a hushed Wan Chai street. This is modern Edomae at its finest, interpreted by the unflinching finesse of sushi maestro Masataka Fujisawa. The 14 or 18-course tasting menus reflect the lofty standards of high end Tokyo, but with the chef’s decidedly punk yet polished personal flair and flow, making the whole experience a much appreciated and respected respite from the monotony of mediocre omakase.
