Between the fine dining options and casual food court joints at Galaxy Macau, The Apron sits comfortably in the middle to offer premium ingredients simply cooked and served in a convivial atmosphere. While traditional tables are available for couples and larger groups, we like drawing up a stool at the oyster bar, where you can witness a wide variety of bivalves (mainly from France, with some specials originating from the US or Ireland) being shucked to order. Served at a perfectly chilled temperature and with your choice of condiments (though we’d recommend nothing but a squeeze of lemon), the cool briny oysters are a treat to start the meal—pair them with a glass or two of champagne, of which athere are many options available. On the other side of the room, an impressive grill top is used to great effect to sear slabs of meat; the beef is aged in-house, with selections from such as Ranger Valley Pure Black Angus flank steak (aged 25 days) and Darling Downs grass-and grain-fed wagyu (aged 32 days). Service is keen and cheerful, adding to the laid back vibe that is conducive to a pleasant, casual meal.
