Mitsuhiro Araki is bringing his premium omakase restaurant to one of Hong Kong’s most iconic locations in November 2019

 

If omakase is a religion in Hong Kong, then The Araki is surely the Holy of Holies. Helmed by Mitsuhiro Araki, who made his name by ascending to the top of the sushi hierarchy in both Tokyo and London, The Araki is a reverential affair that takes place in a hushed, spartan space within a heritage building. Safe to say, the sushi here is ode-worthy, with the fish (Araki prefers using locally caught varieties) treated using the ikejime technique for the most faithful representation of its flavour. Throughout the meal, Araki adjusts the temperature and density of the pressed rice according to the cut of fish—a testament to his attention to detail.
