Tirpse may be set within a busy shopping mall but the most striking thing about the location are the spectacular views it offers of Hong Kong Island—diners would be well advised to request one of the prime window tables. On the menu (a choice of two set options only), the cuisine is billed as artistic French-Japanese, which reflects the offering nicely. Each dish offers enticing textural composition as well as balanced flavours, and the seafood courses in particular are innovative and well-executed. Aside from the view, the setting is pleasant and the service rapid. The wine list has a French bent and decent options by the glass; staff can also offer appropriate pairing suggestions.
