Chef Angelo Aglianó has well and truly found his groove since taking charge at Tosca—his food just keeps getting better. The menu is on the pricey side for Italian dining in the city, but classic techniques and quality ingredients shine throughout. The highlight is a divine Sicilian carabineros prawn busiate, with gorgeously bouncy pasta twirls, perfectly cooked seafood and a rich, heady, umami-laden sauce. Set atop the Ritz-Carlton Hong Kong, spectacular harbour views are a given, while excellent service adds the final flourish. Food and wine recommendations are carefully considered and expertly chosen, with thoughtful extra touches—right down to selecting an olive oil to go with your freshly baked sourdough at the meal’s start.
