Those who wish to splurge on luxury can order the wild yellow croaker from China, simmered in soups and prepared in various ways perfected by the restaurant. Xin Rong Ji sources most of its ingredients from its own farm facilities for better control on its seasonality-driven cuisine. Guests will start their experience with a platter of the season’s freshest harvest of fruits while they order their starters and mains. Peking duck is the piece de resistance and it is phenomenal compared to some of the best ones in Hong Kong. Braised sea anemones with sweet potato noodles are best all year round, and the humble silver ribbon fish are sliced and deep fried until crispy with creamily melting inside.
