For three nights this month, the Italian chef will showcase new renditions of Italian classics

Celebrating the best of Italian cuisine with a contemporary touch, Cucina of Marco Polo Hong Kong Hotel is inviting guest chef Igor Macchia this month for a culinary showcase. From August 10 to 12, Macchia will present his modernised renditions of Italian signatures such as warm salmon fillet with smoked mayonnaise, miso and sesame as a starter, followed by saffron risotto with burrata, pan-fried langoustine and coffee powder, an updated twist on the Milanese classic dish. Macchia also showcases his kingfish with salad soup, vegetables, capers and olives as the three day special menu’s main dish, as well as Chef Igor’s tiramisu, a deconstructed version of the Italian quintessential dessert featuring milk mousse, sponge cake, coffee ice cream and hazelnut crumble.
