The esteemed chef transforms celebrated Italian traditional recipes with a contemporary touch

This month, Cucina welcomes Sicily’s Paolo Barrele to hold a five-day culinary showcase, with a specially-crafted four-course tasting menu that features the chef’s creativity transforming traditional recipes with new elements. Guests can indulge in Barrele’s scallop Caprese with mozzarella cheese, tomato and ginger to start, followed by a tropical Pina Colada risotto with red prawn, coconut milk, pineapple and lime. Paolo Barrele’s signature dishes are available as part of a dinner tasting menu as well as a la carte options for both lunch, dinner, and weekend brunch.
