Helmed by veteran mixologist Devender Sehgal, the omakase will remain a truly rarefied experience

The Aubrey, the eccentric Japanese izakaya created by Maximal Concepts and Mandarin Oriental, Hong Kong introduces the latest element of its extensive beverage-forward offering—the Omakase Cocktail Bar. Within a designated four-seater bar area inside The Aubrey, this unique beverage-led experience is now available for reservation.

In Japanese tradition, omakase is a chef-led dining experience where diners entrust a restaurant’s culinary team to curate a series of dishes that showcase the very best of the season’s produce. Drawing inspiration from this, the Omakase Cocktail Bar takes guests on a journey through premium Japanese spirits via a series of original cocktails, crafted by Devender Sehgal, who leads the bar programme at The Aubrey. With a focus on using lesser-known liquors, including shochu, awamori, and umeshu, the experience also comes with light snacks. Sparkling sake is a house special at The Aubrey and guests will also have a chance to explore the full breadth of this effervescent spirit in some of Sehgal’s cocktails.

With only four seats available to book 3 nights each week (Thursday-Saturday) and new bookings only released once a month, the Omakase Cocktail Bar will remain a truly rarefied experience. Catering to groups of just two to four guests at a time, The Omakase Cocktail Bar includes a personalised cocktail menu with light snacks, and is priced at HK$1,580 per person, subject to 10 per cent service charge. Bookings for the Omakase Cocktail Bar are released on the 15th of each month at 4pm, for the following month.
