Architect André Fu, responsible for the boutique hotel's iconic look, returns to design this latest addition

The much-loved Café Gray Deluxe, which had operated as The Upper House's sole restaurant since the hotel's opening ten years ago, closed on the last day of 2020 to the chagrin of its loyal following of regulars—and left us with the nagging question of what it was making way for. Now, it seems, we have an answer.

Salisterra is the name of the new concept that is pegged to take over the hotel's 49th floor, a Mediterranean restaurant that will "deliver a layered and social dining experience high above the city," reads the venue's website. The name is a neologism of the Latin words for salt (salis) and earth (terra), and hints a continuation of Café Gray Deluxe's relaxed take on fine dining and warm, personalised service within the revitalised environment of a neighbourhood bistro.

Chef Jun Tanaka of one-Michelin-starred French-Mediterranean restaurant The Ninth London will be heading the culinary programme, with a menu that promises to transport the coastal flavours of France and Italy to the tables of diners. A full wine and cocktail programme will complement the food for a holistic experience.

André Fu—whose serene, minimalist design for The Upper House won it international accolades over the last decade—has returned to lend his talent to Salisterra, cloaking the space with earthy and bold colours reflective of the Mediterranean coastline from which the restaurant draws inspiration.

Salisterra is due to open in mid-April 2021—stay tuned for more news as it becomes available about this much-anticipated opening.
